原料 鸭胸肉200克,蘑菇、冬笋、青蒜花各15克,鸡蛋清2个。
调料 精盐、料酒、水淀粉、鲜汤、香油、植物油各适量。
准备工作
1 将冬笋、蘑菇分别择洗干净,沥净水分,均切成小丁,放入沸水中焯烫一下,捞出沥水。
2 鸭胸肉洗净,放入清水锅中烧沸,转中火煮至熟透,捞出,用冷水过凉。
3 把煮好的鸭胸肉擦净水分,先切成长条,再切成小丁。
制作步骤
1 鸡蛋清放入碗中抽打成蛋泡状,放入抹有香油的盘中,修成直径10厘米、厚1厘米的圆形。
2 上面用蒜花摆成“寿”字,放入蒸锅中,用旺火蒸约2分钟,取出。
3 锅中加入植物油烧热,放入鸭丁、冬笋丁、蘑菇丁炒匀,再加入精盐、鲜汤、料酒烧沸。
4 撇去浮沫,然后用水淀粉勾薄芡,出锅倒入汤碗中,推入蒸好的“寿”字蛋羹即可。
